  • 4 medium Ripe mangoes 1 inch cubes

Method

  1. Place milk in a thick-bottomed pan and bring to a boil. Reduce heat and simmer for fifteen to twenty minutes, stirring frequently. Let the cream thicken at the edge of the pan. Add sugar and continue to simmer till milk is thick and creamy and reduced to less than half the original quantity.
  2. Remove from heat, when cool put to chill in the refrigerator. To serve divide the mango cubes into four individual stemmed glasses, pour chilled rabdi onto the mangoes, sprinkle pistachios, garnish with silver varq and serve.
