History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Merenda Recipe

  • Green Gram 1 cup

  • Coconut scraped 1 cup

  • Jaggery (gur) grated 1/2 cup

  • Salt to taste

Method

Step 1

Soak the moong overnight in two cups of water. Drain. Grease a flat plate. Take moong, grated coconut, grated jaggery, salt and one cup of water in a pan.

Step 2

Cook on low heat and simmer till all the ingredients are well mixed and the merenda is reduced to half its quantity. While cooking stir continuously to prevent it from burning.

Step 3

Pour the mixture into the greased plate and spread evenly. Cut into squares or diamonds and serve.
