Ingredients list for Methi Begun

  • 1/2 bunch Fenugreek leaves
  • 1/2 tablespoon Baby brinjals
  • 1 teaspoon Cumin seeds
  • 3 Baby brinjals
  • 1 Green chilli
  • to fry Oil
  • to taste Salt
  • a pinch Sugar

Method

  1. Cut brinjal into cubes. Wash methi leaves thoroughly, chop roughly and keep aside. Heat oil in a kadhai. Deep fry the brinjal pieces and set aside. Heat 1 tablespoon oil in a pan.
  2. Add cumin seeds and slit green chilli. Once the cumin seeds begin to crackle, add the washed methi leaves. Cover and cook for a while. Add salt and a pinch of sugar and cook till done. Add the fried brinjal and cook for another 2 minutes. Serve hot.
