Ingredients for Miniature Tarts With Lemon Curd And Mangoes Recipe

  • Refined flour 225 grams

  • Egg yolks 1 medium

  • Desiccated coconut 2 tablespoons

  • Icing sugar 2 tablespo

  • Unsalted butter chilled and chopped 85 grams

  • Red kidney beans (rajma) as required

  • Fresh cherries as required

  • LEMON CURD

  • Egg yolks 4

  • Powdered sugar 1/2 cup

  • Lemon rind grated 1 tablespoon

  • Lemon juice 1/2 cup

  • Unsalted butter chilled and chopped 180 grams

Method

Step 1

Preheat oven to 180ºC.

Step 2

To make tart shells take refined flour in a bowl. Add desiccated coconut and sugar and mix. Add butter and rub in with finger tip till it resembles bread crumbs. Add sufficient chilled water and mix lightly to a dough. Chill in the refrigerator till use.

Step 3

Grease muffin moulds. Divide the dough into small portions and roll into round discs.

Step 4

Place these in the moulds and cut the extra dough. Chill in the refrigerator for fifteen minutes.

Step 5

Prick the tart shells with a fork. Put some kidney beans in them and place them in the preheated oven. Bake for ten to twelve minutes. Remove the kidney beans and let the tart shells cool.

Step 6

To make lemon curd, break eggs, separate the yolks from the whites and put them in a pan. Beat the yolks. Add powdered sugar and mix.

Step 7

Transfer into a pan. Keep the pan in a bigger pan with boiling water and cook stirring continuously. Add grated lemon rind and continue to cook stirring continuously. Add lemon juice and mix. Add a little butter and stir and cook on low heat. Add some mor

Continue this process till sauce is nice and smooth and thick. Cool it down to room temperature. Put it in a piping bag. Arrange the tart shells in a serving plate.

Step 9

Pipe the lemon curd into the shells. Peel and slice the mango thinly and cut into smaller pieces.

Step 10

Serve immediately. Garnish some of the tarts with these. You can garnish some of the tarts with fresh cherries too. Or some you can garnish with both mango and cherries.
