Ingredients
- 1 medium ridge gourd (turai), peeled
- 2 drumsticks, cut into 1 inch pieces
- 1 medium bitter gourd (karela), cut into roundels
- 10 broad beans (sem ki phalli/papdi), cut into 1 inch pieces
- 1 medium long brinjals, cut into 1 inch cubes
- 1 medium white radish, cut into 1 inch cubes
- 2-3 tablespoons oil
- 1 teaspoon cumin seeds
- 1 teaspoon onion seeds (kalonji)
- 1/2 teaspoon fenugreek seeds (methi dana)
- 1 teaspoon mustard seeds
- 1 teaspoon fennel seeds (saunf)
- 1 1/2 teaspoons ginger paste
- 1 bay leaf
- Sea salt to taste
Method
- Heat oil in a non stick pan. Cut turai into 1 inch pieces.
- Add cumin seeds, onion seeds, fenugreek seeds, mustard seeds and fennel seeds to the oil in the pan and when the seeds splutter, add ginger paste and bay leaf.
- Add turai, drumsticks, karela, broad beans, brinjal and radish pieces. Mix well and cook for 2-3 minutes.
- Add sea salt and mix well. Add 1 cup water and mix, cover and cook till vegetables are done.
- Serve hot.
