As these are a good source of fibre and potassium, which keeps all of our body cells functioning properly. Just when you thought that green peas are only used to add that extra punch to your savoury dishes, try a rich, creamy matar ki kheer to satiate your sweet buds too!

Ingredients for Mixed Vegetable Soup - SK Khazana Recipe

  • Green peas boiled 2 tablespoons

  • Carrots boiled 2 tablespoons

  • French beans boiled 2 tablespoons

  • Sweet corn boiled 2 tablespoons

  • Butter 1/2 tablespoon

  • Olive oil 2 teaspoons

  • Garlic finely chopped 1 tablespoon

  • Black peppercorns 6-8

  • Onion sliced 1 small

  • Refined flour (maida) 1 1/2 tablespoons

  • Vegetable stock 3 cups

  • Salt to taste

  • White pepper powder 1/4 teaspoon

  • Fresh cream 2 tablespoons

  • Crushed black peppercorns to sprinkle

  • Fresh parsley spings for garnish


Step 1

Heat butter and olive oil in a non-stick pan, add garlic, mix and sauté for 30 seconds.

Step 2

Add black peppercorns and onion, mix and sauté till translucent.

Step 3

Add refined flour, mix and sauté for 1 minute. Add vegetable stock and mix well and cook till the mixture thickens. Switch the heat off.

Step 4

Blend the prepared mixture with an electric hand blender till smooth. Strain the mixture into another pan and place it back on heat.

Step 5

Add green peas, carrot, French beans and sweet corn and mix well. Add salt and white pepper powder and mix well. Let the mixture come to a boil.

Step 6

Switch the heat off, add fresh cream, and mix well.

Step 7

Transfer the prepared soup into a serving bowl, sprinkle crushed black peppercorns and garnish with parsley sprig and serve hot.
