By Sanjeev Kapoor 04 Mar 2017 in Recipes Course New Update Main Ingredients Carrots, Zucchini Cuisine British Course Main Course Vegetarian Prep Time 11-15 minutes Cook time 16-20 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Veg Advertisment Ingredients list for Mixed Vegetable Stew 2 medium Carrots 1 inch cubes 1 medium Zucchini 1 inch cubes 2 medium Potatoes 1 inch cubes 1/4 small Cauliflower 1/2 cup Green peas blanched 6-7 leaves Spinach chopped 2 tablespoons Oil 1 medium Onion sliced 2 inch stick Celery chopped 1 1/2 tablespoons Refined flour (maida) 2 cups Vegetable stock to taste Salt 7-8 Black peppercorns crushed 1/2 cup Milk Method Advertisment Cut carrots and zucchini into half inch pieces. Heat oil in a deep pan. Add onions and sauté till transluscent. Add celery and continue to sauté for a minute. Add potatoes, carrots, zucchini and cauliflower and stir. Add refined flour and stir. Add vegetable stock and salt and cook for five to ten minutes or till the vegetables are done. Add crushed black peppercorns and mix. Add green peas and mix. Add spinach and mix. Add milk and let the mixture come to boil. Serve hot with garlic bread.
