History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Mooli Moong Besan Recipe

  • White radish peeled and cut into cubes 2-3

  • Split green gram skinless (dhuli moong dal) soaked for 1 hour 1/2 cup

  • Gram flour (besan) 3 teaspoons

  • Oil 3 tablespoons

  • Dried red chillies 5

  • Ginger chopped 1 teaspoon

  • Asafoetida 1/4 teaspoon

  • Radish leaves chopped 1 cup

  • Salt to taste

  • Turmeric powder 1/2 teaspoon

  • Coriander powder 1 teaspoon

Method

Step 1

Heat 1 tbsp oil in one non stick pan, and the remaining oil in another non stick pan.

Step 2

Cut red chillies into small pieces and add to the second pan. Toss and add ginger and asafoetida. Mix and sauté for 2 minutes.

Step 3

Add radish pieces and mix, cook for a minute and add radish greens and salt. Mix well and add turmeric powder and mix well.

Step 4

Add moong dal to the first pan and cook on high heat for 3-4 minutes. Add coriander powder and mix well. Cook for 3-4 minutes. Add besan and mix well. Cook for 2-3 minutes. Add salt and mix.

Step 5

Add the mixture in the first pan to the second pan and mix well. Cook till dry.

Step 6

Serve hot.
