History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Moong Dosa Recipe

  • Moong Sprouts 1 1/2 cups

  • Dosa Batter

  • Green chillies 2

  • Ginger 2 inch piece

  • Red chilli powder 1/2 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Salt to taste

  • Oil to shallow fry

Method

Step 1

Mix together moong sprouts, ½ cup water and salt in a bowl and cook in a microwave on high for 2 minutes.

Step 2

Drain extra water. Chop green chillies and ginger.

Step 3

Take dosa batter in a bowl, add green chillies, ginger, red chilli powder, turmeric powder, salt and moong sprouts and mix well.

Step 4

Heat a non stick dosa tawa, grease it with a little oil. Pour small quantities of dosa batter and spread into small dosas.

Step 5

Cook on a low heat, turning sides, till both sides are evenly cooked.

Step 6

Serve hot with green chutney or tomato ketchup.
