Ingredients list for Mozzarella Skewers

  • 12 slices White Bread 1/2 inch slices
  • 3 tablespoon Mozzarella Cheese
  • 225 grams Mozzarella cheese 1/4 inch pieces
  • 3 medium Tomato cut into 1/4 inch pieces
  • 20-25 Basil leaves
  • to taste Salt
  • 10-12 Peppercorns freshly ground

Method

  1. Preheat the oven to 220°C. Trim the bread crusts and cut each slice into four equal squares. Brush both sides with olive oil, arrange on a baking tray and bake for three to five minutes, or until the squares are pale gold.
  2. Remove from the oven. Thread stacks onto sixteen wooden skewers, starting each with a square of bread, followed by a slice of mozzarella, a slice of tomato and a basil leaf.
  3. Sprinkle with salt and crushed peppercorns, and repeat the sequence ending with a slice of bread. Place the skewers on a baking tray and drizzle with remaining oil.
  4. Bake for ten to fifteen minutes or till the cheese begins to melt. Serve hot, garnished with fresh basil leaves.
