Ingredients list for Muffin Omelette
- 5 Egg
- 1/4 large Cheese
- 1/4 large Yellow capsicum
- 1/4 large Green capsicum
- to taste Salt
- to taste Black pepper powder
- 1 medium Onion chopped
- 3-4 Black olives sliced
- 2 Pickled jalapenos sliced
- 1 cup Cheese grated
- 8 tablespoons Extra virgin olive oil
Method
- Preheat oven at 180°C. Roughly chop 3 coloured peppers (capsicums) in a chopper. Arrange 8 muffin moulds on a baking tray. Put some of the chopped peppers in each mould.
- Break eggs into a bowl, add salt, pepper powder, onion, olives and whisk.Pour the egg mixture into the moulds. Put some jalapeno slices and cheese on top.
- Drizzle a little extra virgin oil over each. Place the tray in the preheated oven and bake till set. Remove from moulds and serve hot.
