You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Muffin Omelette Recipe

  • Egg 5

  • Cheese 1/4 large

  • Yellow capsicum 1/4 large

  • Green capsicum 1/4 large

  • Salt to taste

  • Black pepper powder to taste

  • Onion chopped 1 medium

  • Black olives sliced 3-4

  • Pickled jalapenos sliced 2

  • Cheese grated 1 cup

  • Extra virgin olive oil 8 tablespoons

Method

Step 1

Preheat oven at 180°C. Roughly chop 3 coloured peppers (capsicums) in a chopper. Arrange 8 muffin moulds on a baking tray. Put some of the chopped peppers in each mould.

Step 2

Break eggs into a bowl, add salt, pepper powder, onion, olives and whisk.Pour the egg mixture into the moulds. Put some jalapeno slices and cheese on top.

Step 3

Drizzle a little extra virgin oil over each. Place the tray in the preheated oven and bake till set. Remove from moulds and serve hot.
