Ingredients list for Mushroom Cheddar Melts
- 10-12 Button mushrooms sliced
- 50 grams Cheddar cheese
- 1 French baguette
- 1 small Onion
- + 2 tablespoons Oil for brushing
- 5-6 Garlic cloves
- 6-7 Cherry tomatoes
- 1-2 Fresh thyme sprigs
- to taste Salt
- to taste Crushed black peppercorns
- ½ teaspoon Red chilli flakes
Method
- Halve the baguette and place on a baking tray. Put the tray in the oven and bake for 10-12 minutes.
- Slice onion and 2-3 garlic.
- Heat oil in a non-stick pan, add garlic and onion and sauté till translucent.
- Add mushrooms and sauté further for a minute. Halve cherry tomatoes.
- Brush the baked baguette with some oil. Rub garlic cloves over it and keep aside.
- Add cherry tomatoes to the pan along with thyme and mix well. Add salt, crushed peppercorns and chilli flakes and mix well.
- Place a portion of the mushroom on the baguette. Grate cheese on top.
- Put the baguette on the baking tray and put the tray in the preheated oven and bake for 3-4 minutes.
- Serve hot.
