Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Mushroom Gold Coin Recipe

  • Button mushrooms finely chopped 10-12

  • Bread slices 4-5

  • Oil 1 tablespoon

  • Green chillies finely chopped 2

  • Ginger-garlic paste 1 tablespoon

  • Salt to taste

  • Spring onion finely chopped 1

  • Tomato ketchup 1 tablespoon

  • Mint paste 1 tablespoon

  • Refined flour (maida) 1 tablespoon

  • coriander leaves chopped 1 tablespoon

  • Egg 1

  • Cornflour/ corn starch 1 tablespoon


Step 1

Heat oil in a non-stick pan

Step 2

Add green chillies and sauté. Add ginger-garlic paste and sauté.

Step 3

Add mushrooms and sauté on high heat.

Step 4

Add salt and mix well.

Step 5

Add spring onion and sauté for a minute.

Step 6

Add tomato ketchup, mint leaves and mix well.

Step 7

Add refined flour and mix well.

Step 8

Add coriander and mix well. Cool.

Step 9

Whisk egg in a bowl.

Step 10

Add cornflour and mix well. Add salt and mix well.

Step 11

Place the bread on a worktop, make a roundel with a cookie cutter.

Step 12

Heat sufficient oil in a kadai.

Step 13

Apply egg-cornflour mixture on the base of the bread slices, spread mushroom mixture evenly over it. Brush egg mixture over it.

Step 14

Deep-fry the gold coins in hot oil till crisp and golden brown.

Step 15

Serve immediately.
