Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Mushroom Lemongrass Soup Recipe

  • Button mushrooms finely sliced 2 cups

  • Lemon grass 3 X 1-inch to serve

  • Oil 1/2 teaspoon

  • Garlic chopped 1 tablespoon

  • Onion finely chopped 1 medium

  • Vegetable stock 4 cups

  • Salt to taste

  • Black peppercorns Crushed to taste

  • Mixed herbs 1/2 teaspoon

Method

Step 1

Heat oil in a non-stick pan. Add garlic and sauté till fragrant. Add onion, mix and sauté for 1 minute.

Step 2

Add mushrooms, mix and cook for 2 minutes.

Step 3

Discard the outer layer of lemongrass stalks and finely chop. Put the chopped lemongrass on a piece of muslin cloth and tie into a bundle.

Step 4

Add vegetable stock to the pan and stir to mix. Add salt, crushed peppercorns and mixed herbs and stir to mix. Add lemongrass bundle, cover and simmer for 5-6 minutes.

Step 5

Discard the lemongrass bundle and pour the soup into teapots. Serve hot with a lemongrass stick as a stirrer.
