Ingredients
- 20-25 button mushrooms, sliced
- 3-4 oyster mushrooms, soaked
- 10-12 cherry tomatoes, halved
- 3 spring onions with greens
- 8-10 garlic cloves
- 3 brown bread slices
- ½ medium onion
- 2-3 parsley sprigs
- Salt to taste
- ½ teaspoon crushed black peppercorns
- ½ teaspoon crushed red chillies
- 4-5 tablespoons extra virgin olive oil
Method
- Preheat oven to 180° C.
- Roughly chop spring onions with greens, garlic, brown bread slices, onion and parsley sprigs in a chopper.
- Place button mushrooms in a bowl and add cherry tomatoes. Roughly chop oyster mushrooms and add along with salt, crushed black peppercorns, crushed red chillies, 2 tbsps extra virgin olive oil, 2-3 tbsps of spiced breadcrumbs and mix well.
- Transfer this mixture into a glass baking dish and press lightly. Top with the remaining spiced breadcrumbs. Drizzle 2-3 tbsps extra virgin olive oil.
- Bake in the preheated oven for 20-25 minutes.
- Serve hot.
