Ingredients list for Orange Caramel Custard
- 1 tablespoon Orange marmalade
- 1 Orange peeled and segments separated
- 2 cups Orange juice cooked till thick
- 4 Eggs
- 4 tablespoons Sugar
- 1/2 cup Cream
- 2 cups Warm milk
- For caramel
- 1/2 cup Sugar
Method
- Preheat oven to 180°C. Cook ½ cup sugar with 2 tbsps water in a non-stick pan till it caramelizes.
- Put orange marmalade into a blender jar. Add half the orange segments and blend. Break eggs into a bowl and whisk. Add sugar and continue to whisk. Add cream and warm milk and whisk.
- Add orange marmalade-orange segments mixture, thickened orange juice and mix well. Place ramekin moulds in a deep baking dish half filled with water.
- Pour the caramel equally into each mould. Place a few orange segments in each mould. Pour the egg-milk mixture into the moulds till almost full and cook in the preheated oven for 40 minutes.
- Take them out of the oven, cool and chill in the refrigerator before serving.
