History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Paan Ice Cream Recipe

  • Paan Leaves chopped 4

  • Meetha Paan 2

  • Milk 5 cups

  • Sugar 1/2 cup

  • Khoya/mawa 6 tablespoons

  • Fennel seeds (saunf) 1 tablespoon

  • Gulkand 2 tablespoons

  • Green cardamom powder 1/4 teaspoon

Method

Step 1

Bring milk to a boil and cook till it reduces to one third its volume. Remove from heat and add sugar and mix. Add khoya and mix. Set aside to cool.

Step 2

Add fennel seeds, gulkand, green cardamom powder, paan leaves and meetha paan and blend everything together in a blender. Strain the mixture.

Step 3

Transfer into an ice cream tin and cover with the lid. Keep it in the deep freezer for four to six hours or till well set.

Step 4

Unmould, slice and serve immediately.
