History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Panchamrut Recipe

  • Sesame seeds (til) 1/4 cup

  • Coconut scraped 1/4 cup

  • Peanuts 1/4 cup

  • Tamarind 1/4 cup

  • Green chillies 2

  • Oil 2 tablespoons

  • Asafoetida 1/4 teaspoon

  • Jaggery (gur) grated 1/2 cup

  • Goda masala 2 tablespoons

  • Salt to taste


Step 1

Roast sesame seeds and peanuts. Grind to a coarse powder. Soak tamarind in a little warm water and remove pulp.

Step 2

Remove stems, wash and chop green chillies finely. Heat oil/ghee in a pan, add asafoetida and cook for a moment.

Step 3

Add jaggery, tamarind pulp, peanut and sesame powder, coconut, green chillies, goda masala and a pinch of salt. Mix it well.

Step 4

Add half a cup of water, bring it to a boil for two to three minutes. Serve when cool.
