Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Paneer Frankie Recipe

  • Cottage cheese (paneer) cut into 2x1x1 inch strips 500 grams

  • Refined flour rotis 4

  • Red chilli powder 3 teaspoons

  • Chaat masala 2 teaspoons

  • Black salt to taste

  • Coriander powder 1 1/2 teaspoons

  • Salt to taste

  • Oil 1 tablespoon

  • Medium onion finely chopped 1

  • Ginger-garlic paste 1 teaspoon

  • Medium tomato finely chopped 1

  • Cumin powder 1 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Chilli vinegar 4 teaspoons

  • Onion slices as required

  • Fresh coriander leaves chopped as required

Method

Step 1

To make spice mix, take 2 teaspoons red chilli powder, chaat masala, black salt, 1 teaspoon coriander powder and salt in a bowl and mix well.

Step 2

Heat oil in a non-stick pan, add onion and saute till translucent. Add ginger-garlic paste, mix well and saute till the raw smells disappear.

Step 3

Add tomato, mix and saute till it softens. Add 1 teaspoon red chilli powder, ½ teaspoon coriander powder, cumin powder, turmeric powder and salt, mix and saute for 1 minute. Add ¼ cup water and mix well.

Step 4

Add cottage cheese strips and mix well till all the cottage cheese strips are well coated with the masala. Add 2 tablespoons water and mix gently. Take the pan off the heat and set aside to cool.

Step 5

Heat a non-stick tawa, keep each roti on it and roast lightly turning sides.

Step 6

Keep each roti on the table top, keep two strips of masala coated cottage cheese on each roti, drizzle 1 teaspoon chilli vinegar over them, sprinkle the spice mix, some onion slices and coriander leaves and roll the roti.

Step 7

Wrap the frankies in a colourful tissue, keep them on a serving platter and serve immediately.
