A favourite with the vegetarians, paneer made from milk is quite common, especially paneer recipes are quite popular in the Indian subcontinent. You can make it fresh, chhena – an another version or just use the ones that are readily available in the market to prepare everything from simple snacks, curries, sabzis, mithais, desserts and the likes. An ingredient that can be relished in the raw form too – try serving it as a starter just sprinkled with a little chaat masala, black salt and chilli powder!

Ingredients for Paneer Khada Pav Bhaji Recipe

  • Paneer (cottage cheese) diced 100 grams

  • Medium potatoes boiled, peeled and diced 2

  • Cauliflower florets blanched 10-12

  • Medium green capsicum chopped 1

  • Green peas blanched 1/2 cup

  • Pav bhaji masala 1 tablespoon

  • Toasted pav 8

  • Butter 2 tablespoons

  • Oil 1 tablespoon

  • Medium onion chopped 2

  • Ginger-garlic paste 1 tablespoon

  • Medium tomatoes chopped 2

  • Red chilli powder 1 1/2 teaspoons

  • Kashmiri red chilli paste 1 teaspoon

  • Salt to taste

  • Fresh coriander leaves chopped 2 tablespo to garnish

  • Lemon wedges to serve

Method

Step 1

Heat butter and oil on a non-stick tawa. Add onions and sauté till light golden brown.

Step 2

Add ginger-garlic paste, mix and sauté till raw smells disappear. Add tomatoes, mix and sauté for 4-5 minutes.

Step 3

Add red chilli powder, chilli paste and ¼ cup water and mix well. Add salt and mix. Add ¼ cup water, mix and saute for 2-3 minutes. Add pav bhaji masala and mix well. Add ½ cup water and mix well.

Step 4

Add potatoes, cauliflower, capsicum, green peas, mix well and cook for 3-4 minutes.

Step 5

Add cottage cheese, ½ cup water and salt, mix well and cook for 2-3 minutes. Add coriander leaves and mix.

Step 6

Transfer into a serving plate, sprinkle coriander leaves on top and serve hot with toasted pavs and lemon wedges.
