Ingredients list for Paneer Orange Cake

  • 1 cup Cottage Cheese grated
  • 1 tablespoon Orange Rind grated
  • ¼ cup Orange juice
  • 2 tablespoon Orange marmalade
  • 3 Eggs
  • 1 cup Castor sugar (caster sugar)
  • 1 teaspoon Vanilla essence
  • Juice of ½ lemon
  • 1½ cups + Refined flour (maida)
  • 1 teaspoon Baking powder
  • for greasing Oil
  • for dusting Icing sugar

Method

  1. Preheat oven to 180º C.
  2. Break eggs in a bowl, add sugar and beat with an electric beater till fluffy. Add orange rind, vanilla essence, cottage cheese, lemon juice and orange juice and continue to beat for 2-3 minutes.
  3. Sift together refined flour and baking powder into the bowl and mix well.
  4. Grease a cake tin with oil and dust with dry flour. Pour the cottage cheese-orange mixture into it and tap lightly.
  5. Place the tin in the preheated oven and bake for 25-30 minutes.
  6. Remove the cake tin from oven, cool down to room temperature. Remove the cake from the tin and place on a plate. Spread orange marmalade evenly over it, dust icing sugar on top, cut into wedges and serve immediately.
