Ingredients for Papaya Coconut Boats Recipe

  • Ripe Papaya peeled, seeded and cut into wedges 1 small

  • Scraped Fresh Coconut 1/2 cup

  • Dried red chillies 5

  • Garlic cloves 3

  • Spring onion with greens 1

  • Oil 2 teaspoons

  • Onion finely chopped 1 small

  • Lemon grass (white part only) chopped 2 tablespoons

  • Salt to taste

  • Brown sugar 2 teaspoons

Method

Step 1

Grind dried red chillies, garlic cloves and spring onion with greens into a smooth paste.

Step 2

Heat oil in a non-stick pan, add onions, lemon grass and the ground paste. Mix well and cook for five minutes.

Step 3

Lower heat and add coconut, salt and brown sugar. Cook for ten to fifteen minutes, stirring continuously. Remove from heat, cool down to room temperature and grind the mixture to a coarse powder.

Step 4

Sprinkle on the papaya wedges and serve.
