Italian cuisine has developed through centuries of social and political changes, with roots stretching to antiquity.  Italian cuisine is simple and a number of dishes having only four to eight ingredients.  They rely mostly on the quality of ingredients rather than elaborate preparation.
Noteworthy changes in Italian cuisine happened with the discovery of the New World and the introduction of potatoes, tomatoes, bell peppers and maize, which are now an integral part of this cuisine.  Italian cuisine is known for its regional diversity each with a distinct taste.  This cuisine today is probably one of the most popular in the world.

Ingredients for Parmesan Potatoes Recipe

  • Banby Potatoes parboiled with skin and halved 25-30

  • Parmesan cheese powder 2 tablespoons

  • Extra virgin olive oil 3 tablespoons

  • Onion finely chopped 1 medium

  • Salt to taste

  • Crushed red chillies 1 teaspoon

  • Dried mixed herbs 1 teaspoon

  • Refined flour (maida) 1 tablespoon

  • Arrabiata sauce 1 bottle

Method

Step 1

Preheat oven to 180°C. Heat 1 tbsp extra virgin olive oil in a non stick pan. Add onion and potatoes and mix. Add salt, crushed red chillies, dried mixed herbs and mix well and cook for 1 minute. Add refined flour and toss.

Step 2

Spread the contents of 1 bottle arabiatta sauce in a baking dish evenly. Add 2 tbsps parmesan cheese powder to the potatoes and mix well.

Step 3

Put these potatoes over the sauce in the baking dish and spread evenly. Sprinkle the remaining parmesan cheese powder over them. Bake in the preheated oven for 20 minutes. Drizzle remaining extra virgin olive oil over and serve hot.
