Ingredients
- 200 grams penne pasta, boiled
- 2 medium onions
- 3 tablespoons olive oil
- 1½ inch ginger
- 6-7 garlic cloves
- 1½ cups tomato concasse
- 2 green chillies
- 2 fresh thyme sprigs
- A few curly parsley sprigs
- Salt to taste
- 2 tablespoons extra virgin olive oil
Method
- Horizontally slice onions.
- Heat olive oil in a non-stick wok and add onions. Finely chop ginger and add to the wok. Crush garlic cloves and add. Mix and sauté till fragrant.
- Add penne pasta and tomato concasse. Diagonally slice green chilli and add to the wok and mix well.
- Add ¼ cup water and mix well and let the pasta get heated through.
- Add fresh thyme. Roughly chop curly parsley and add along with salt and mix well. Transfer into a serving bowl, drizzle extra virgin olive oil and serve immediately.
