Pasta in Creole Sauce

Ingredients 

  • 200 grams penne pasta, boiled
  • 2 medium onions
  • 3 tablespoons olive oil
  • 1½ inch ginger
  • 6-7 garlic cloves
  • 1½ cups tomato concasse
  • 2 green chillies
  • 2 fresh thyme sprigs
  • A few curly parsley sprigs
  • Salt to taste
  • 2 tablespoons extra virgin olive oil

Method

  1. Horizontally slice onions.
  2. Heat olive oil in a non-stick wok and add onions. Finely chop ginger and add to the wok. Crush garlic cloves and add. Mix and sauté till fragrant.
  3. Add penne pasta and tomato concasse. Diagonally slice green chilli and add to the wok and mix well.
  4. Add ¼ cup water and mix well and let the pasta get heated through.
  5. Add fresh thyme. Roughly chop curly parsley and add along with salt and mix well. Transfer into a serving bowl, drizzle extra virgin olive oil and serve immediately.
