Gujarat has long stretches of unspoilt coastline and an endless supply of fish and shell fish. But strict Jainism in the past and orthodox Hinduism today has encouraged widespread vegetarianism.  The Gujarati cuisine is not heavily spiced but slightly sweeter than the cuisines of the neighbouring states.
Gujarati food is distinctively vegetarian with about 65% of its population shunning the meat.  The remaining 35% of the state’s population consists of Bohra Muslims and Parsis. Bohra Muslims are the followers of Abdullah who were Hindus who adopted Muslim religion.  The Parsi cuisine on the other hand is a blend of western influences.

Ingredients for Paunk Na Wada Recipe

  • Fresh Green Jowar 1 cup

  • Gram Flour 1 1/2 cups

  • Yogurt 2 tablespoons

  • Red chilli powder 1/2 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Soda bicarbonate a pinch

  • Salt to taste

  • Onion chopped 1 medium

  • Green chillies chopped 2

  • Fresh coriander leaves chopped a few sprigs

  • Oil to deep fry

  • Chaat masala 1 teaspoon

Method

Step 1

In a large bowl combine besan, yogurt, red chilli powder, turmeric powder, soda bicarbonate and salt along with three fourth cup of water and whisk till smooth to make a batter of dropping consistency.

Step 2

Add paunk, chopped onion, green chillies and coriander leaves and mix well. Heat sufficient oil in a kadai and drop teaspoonfuls of batter in the oil. Deep fry on medium heat till golden and crisp.

Step 3

Drain onto an absorbent paper. Serve hot sprinkled with chaat masala.
