In ancient times in the more affluent homes, feasts often started at mid-day and ended when the sun set! The presentation of food was alluring with a practice to sing sacred verses to dedicate the meal to God.
Maharashtrian cuisine covers a wide range from being extremely mild to very spicy dishes. Wheat, rice, jowar, vegetables, lentils and fruit form important components of Maharashtrian diet.

Ingredients for Pav Bhaji Buns with Cheese Recipe

  • Pavs 4

  • Cheese slices 4

  • Oil 4 teaspoons

  • Onions chopped 3 medium

  • Butter 6 tablespoons

  • Pav bhaji masala 3 tablespoons

  • Ginger-garlic paste 3 teaspoons

  • Tomato puree 2 cups

  • Potatoes boiled, peeled and mashed 6 medium

  • Salt to taste

  • Fresh coriander leaves chopped 1/2 cup

  • coriander sprig 4 grams

Method

Step 1

Heat oil in non stick pan. Add onions and sauté till light golden.

Step 2

Add 4 tbsps butter, mix well and sauté till onions are soft. Heat another non stick pan. Slit pavs from the top and place on pan. Cook till crisp on both sides.

Step 3

Add pav bhaji masala to the first pan and mix well. Add ginger-garlic paste, tomato puree, potatoes and ½ cup water. Mix well and cook till thick.

Step 4

Add salt and mix well. Add coriander leaves and remaining butter and mix well and remove from heat.

Step 5

Fold cheese slices. Fill each pav with bhaji and place a cheese slice on one side of each pav, serve garnished with a coriander sprig. Serve immediately.
