Ingredients list for Peach Upside Down Cup Cakes

  • 2 canned Peaches
  • 1 1/2 cups Refined flour (maida)
  • 1 1/2 teaspoons Baking powder
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Clove powder
  • 3/4 cup Sugar
  • 3/4 cup Buttermilk
  • 2 tablespoons Peach puree
  • 1 tablespoon Butter
  • 1 large Egg
  • 1/4 cup Honey

Method

  1. Preheat oven to 180°C. Cut peaches into 8 thick slices and put one slice in each of 8 muffin moulds.
  2. Sieve together refined flour, baking powder, baking soda, salt, clove powder into a bowl. Add sugar and buttermilk and mix. Add peach puree, butter and mix. Add egg and mix.
  3. Drizzle honey equally over the peach slices in each mould. Pour the batter into the moulds till ¾ full. Arrange them on a baking tray and keep the tray in the preheated oven. Bake for 30 minutes.
  4. Take them out, cool slightly, turn them upside down on serving plates and serve.
