French cuisine was codified in the 20th century as the modern haute cuisine. Knowledge of French cooking has contributed significantly to Western cuisines and its criteria are used widely in Western cookery school boards and culinary education. 
French regional cuisine is characterized by its extreme diversity and style. Traditionally, each region of France has its own distinctive cuisine.

Ingredients for Pear Tarte Tatin-Cook Smart Recipe

  • Pears peeled and cut into wedges 4-5

  • Butter 1/3 cup

  • Brown sugar 1/2 cup

  • Fresh cream 3 tablespoons

  • Walnuts toasted 1/4 cup

  • Icing sugar for dusting

  • Sweet short crust pastry

  • Refined flour (maida) 2 cups + for dusting

  • Butter chilled 1 cup

  • Sugar 1/2 cup

  • Egg 1

Method

Step 1

Heat butter in a non-stick pan. Add brown sugar and cream, mix well and let the sugar melt. Add pears, mix and cook till the pears turn soft.

Step 2

To make short crust pastry, combine refined flour and butter in a bowl. Mix well with fingertips till the mixture resembles breadcrumbs.

Step 3

Add sugar and mix well.

Step 4

Separate egg yolk from white and add the yolk to the flour mixture. Add ¼ cup chilled water and knead into a smooth dough. Refrigerate the dough for ½ hour.

Step 5

Preheat oven at 200ºC. Divide the short crust pastry into large portions.

Step 6

Place a large sheet of greaseproof sheet on the worktop. Dust with refined flour, place a portion of short crust pastry on it and place one more greaseproof sheet on top. Roll out into a large disc. Make remaining discs similarly.

Step 7

Put cooked pears into a baking dish. Top with walnuts and cover with the rolled out short crust pastry disc. Press the edges and prick the top with a knife.

Step 8

Put the baking dish in the preheated oven and bake for 25 minutes.

Step 9

Invert the baking dish onto a plate and demould and serve immediately.
