By Sanjeev Kapoor 05 Jun 2014 in Recipes Course New Update Main Ingredients Penne pasta, Tomato concasse Cuisine Fusion Course Noodles and Pastas Prep Time 16-20 minutes Cook time 11-15 minutes Serve 4 Taste Tangy Level of Cooking Easy Others Veg Advertisment Ingredients list for Penne With Roasted Peppers, Tomato And Basil Salsa 200 grams Penne pasta 1 medium Tomato concasse 1 medium Yellow capsicum,roasted 1 medium Red capsicum,roasted 2 cups Tomato concasse 10-12 Fresh basil leaves,hand torn 1 tablespoon Olive oil 2 medium Onions,chopped 10 cloves Garlic,crushed to taste Salt 2 Jalapenos ,sliced 3-4 Black olives,sliced Method Heat water in a deep non stick pan. Keep a strainer on it and put the penne in it and cook. Heat the oil in a non stick pan. Add onions and garlic and sauté till golden. Add the tomato concasse and half a cup of water and stir. Add salt and cook. Peel the roasted capsicums, remove seeds and chop roughly. Add to the tomatoes. Add jalapenos, black olives and basil leaves and mix well. Lift the strainer with the penne from the pan, let all the water drain off and add to the sauce in the pan.
