Ingredients list for Penne With Roasted Peppers, Tomato And Basil Salsa

  • 200 grams Penne pasta
  • 1 medium Tomato concasse
  • 1 medium Yellow capsicum,roasted
  • 1 medium Red capsicum,roasted
  • 2 cups Tomato concasse
  • 10-12 Fresh basil leaves,hand torn
  • 1 tablespoon Olive oil
  • 2 medium Onions,chopped
  • 10 cloves Garlic,crushed
  • to taste Salt
  • 2 Jalapenos ,sliced
  • 3-4 Black olives,sliced

Method

  1. Heat water in a deep non stick pan. Keep a strainer on it and put the penne in it and cook. Heat the oil in a non stick pan.
  2. Add onions and garlic and sauté till golden. Add the tomato concasse and half a cup of water and stir. Add salt and cook. Peel the roasted capsicums, remove seeds and chop roughly. Add to the tomatoes. Add jalapenos, black olives and basil leaves and mix well.
  3. Lift the strainer with the penne from the pan, let all the water drain off and add to the sauce in the pan. Mix well and serve hot or cold.
