Some say Chinese cuisine is 400,000 years old going back to the Peking Man and his use of fire. Some other accounts of the history of Chinese cuisine takes the beginning to the Chinese stone age. However today Chinese cuisine enjoys the distinction of being the most popular in the world.
All this furore about Chinese food can make one wonder what is so special about this cuisine.  To put it in one word it is wholesome.  It has the characteristics of being nutritious, economical, balanced and delicious. It cannot be gainsaid that Chinese food is popular the world over and it can be adapted into our modern lifestyles as the strong link between diet and health of body, mind and spirit is epitomized in Chinese cookery. We all desire harmony in our lives and this works on the ancient Taoist principle of Yin and Yang in which balance and contrast are the key. Each Chinese dish reflects a balance of taste, texture, aroma and colour. Be it sweet, sour, pungent, hot, salty or spicy – all the six basic flavours are incorporated deftly in all Chinese dishes.

Ingredients for Pepper Garlic Lobster Recipe

  • Lobster 4 medium

  • Black peppercorns crushed 15-20

  • Garlic chopped 14-16 cloves

  • Lemon juice 3 tablespoons

  • Salt to taste

  • Fresh coriander leaves 6-8 sprigs

  • Cornflour/ corn starch 2 tablespoons

  • Oil 1 tablespoon

  • Butter 4 tablespoons

  • Onion chopped 1 small

  • Sugar 1 teaspoon

  • Chicken stock 2 cups

  • MSG 1/4 teaspoon


Step 1

Remove the head and shell from lobsters. Wash, pat dry with an absorbent paper and cut them into one inch pieces. Add the lemon juice and half teaspoon of salt and leave aside to marinate for about half an hour.

Step 2

Keep the coriander sprigs in chilled water. Mix cornflour in half a cup of water. Heat oil and butter together in a wok or a pan. Add onion and garlic and stir-fry for two minutes. Add marinated lobsters, sugar and crushed peppercorns.

Step 3

Continue to stir-fry for one minute. Stir in chicken stock and bring the mixture to a boil. Add salt, MSG and stir in the cornflour mixture.

Step 4

Cook on high heat for a minute or until sauce thickens and coats the lobster pieces. Remove coriander sprigs from water and garnish the lobsters. Serve hot.
