Ingredients list for Peri Peri Chicken

  • 500 grams Chicken legs
  • + 3 tablespoons Olive oil 1 teaspoon + ¼ cup
  • 5-6 Fresh red chillies
  • 6-8 Garlic cloves
  • 1 medium Onion
  • 2-3 Fresh parsley sprigs
  • 2-3 Fresh oregano sprigs
  • 1 teaspoon Paprika powder
  • to taste Salt
  • 1 tablespoon Red wine vinegar
  • 2 tablespoons Lemon juice
  • 1 teaspoon Crushed black peppercorns
  • to serve French fries
  • 1 tablespoon Butter
  • to serve Steamed corn on the cob

Method

  1. Preheat oven to 180º C.
  2. Heat 1 teaspoon olive oil in a non-stick pan, add chillies and garlic.
  3. Roughly chop onion and add to the pan and cook for 4-5 minutes. Take it on a plate and cool.
  4. Grind the prepared chilli mixture, parsley, oregano, paprika powder, salt, red wine vinegar, lemon juice, crushed peppercorns, 3 tablespoons olive oil to a smooth paste.
  5. Make incisions on the chicken, add the ground paste and rub the spices over chicken. Keep in the refrigerator for 3-4 hours.
  6. Place the marinated chicken on a baking tray, put the tray in the preheated oven and bake for 15-18 minutes.
  7. Place French fries on a serving plate.
  8. Heat butter in a non-stick pan, place corn on the cob and sauté till brown and done.
  9. Place peri peri chicken in the centre of the plate, place sautéed corn on the cob on other side and serve immediately.
