Ingredients list for Pidde

  • 1 kilograms Refined flour (maida)
  • as required Buttermilk
  • 1/2 teaspoon Soda bicarbonate
  • to taste Salt
  • 2 teaspoons Yeast

Method

  1. Sieve refined flour and soda bicarbonate together.
    Soak yeast in quarter cup of lukewarm water and set aside till it begins to froth.
  2. Make a well in the flour mixture and pour the yeast mixture into it.Mix in the flour.
  3. Add two and three fourth cups of water and knead into a soft dough.Cover with a damp cloth and set aside for the dough to rise.
  4. Divide the dough into ten to twelve equal portions.Take each portion on a lightly floured board and pat with your fingers to a round disc.
  5. It should not be too thin.Brush the top with some thin buttermilk.
  6. Using only your finger tips press lightly to make groves all around.Place the pidde on a long wooden spatula and put it in the tandoor to bake. Serve hot.
