Ingredients list for Pineapple Aabshola

  • 1 medium Pineapple
  • 4-6 Fresh mint leaves
  • 1/4 cup Powdered sugar
  • 2 Lychees
  • to taste Black salt (kala namak)
  • 6-8 Black peppercorns crushed
  • 4 stalks Lemon grass

Method

  1. Peel, and slice pineapple thinly
  2. Wash mint leaves. Dust fresh pineapple slices with powdered sugar.
  3. Arrange them on a tray and heat, turning over from time to time, till they caramelize .
  4. This will take about five minutes. Add some water and continue cooking for another three minutes.
  5. Place these slices in a blender with lychees and blend.
  6. Add the caramel liquid and blend again.
  7. Add black salt and mint leaves and blend. Add ice, crushed peppercorns and blend once more.
  8. Pour the liquid into a stemmed glass.
  9. Put in a lemongrass stalk as stirrer and serve chilled.
