Ingredients
- 6 pineapple slices, cut into ¾ inch pieces
- 16-20 lettuce leaves, hand torn
- 2 medium cucumbers, seeded and cut into 3/4 inch pieces
- 2 tablespoons lemon juice
- 3 tablespoons pineapple juice
- 1 tablespoon honey
- Salt to taste
- 1/4 teaspoon dried mixed herbs
- 1/4 teaspoon black peppercorns
- 1/4 teaspoon white pepper powder
Method
- Wash and keep the iceberg lettuce in ice cold water for about fifteen minutes. Mix lemon juice, pineapple juice, honey, salt, mixed herbs, crushed peppercorns and white pepper powder.
- Set aside for at least fifteen minutes. Combine lettuce with pineapple and cucumber pieces in a serving bowl. Pour the dressing on the salad and toss lightly. Serve immediately.
