Pineapple And Lettuce Salad

Ingredients

  • 6 pineapple slices, cut into ¾ inch pieces
  • 16-20 lettuce leaves, hand torn
  • 2 medium cucumbers, seeded and cut into 3/4 inch pieces
  • 2 tablespoons lemon juice
  • 3 tablespoons pineapple juice
  • 1 tablespoon honey
  • Salt to taste
  • 1/4 teaspoon dried mixed herbs
  • 1/4 teaspoon black peppercorns
  • 1/4 teaspoon white pepper powder

Method

  1. Wash and keep the iceberg lettuce in ice cold water for about fifteen minutes. Mix lemon juice, pineapple juice, honey, salt, mixed herbs, crushed peppercorns and white pepper powder.
  2. Set aside for at least fifteen minutes. Combine lettuce with pineapple and cucumber pieces in a serving bowl. Pour the dressing on the salad and toss lightly. Serve immediately.
