Ingredients
- 3 pineapple slices, cut into ½ inch cubes
- 1/2 cup walnut kernels, toasted
- 1 medium bunch Iceberg lettuce, hand torn
- 1 celery stalk, cut into 1/2 inch pieces
- 3 tablespoons mayonnaise
- 2 tablespoons cream
- Salt to taste
- 1/2 teaspoon crushed black peppercorns
Method
- Roughly break the walnuts into smaller pieces. Using a rolling pin crush a few walnuts to a coarse powder. In a mixing bowl, mix in pineapple, lettuce leaves, celery and walnut pieces.
- Add mayonnaise and cream. Add salt and freshly crushed pepper. Lightly toss the salad so that the dressing evenly coats the pineapple, walnut and lettuce leaves.
- Garnish it with coarse walnut powder and serve cold.
