The discovery of the New World brought new essential ingredients to the Mediterranean gastronomy like tomato, potato, chocolate that are now commonly used in a lot of Spanish dishes.

Ingredients for Pineapple and Peach Colada Recipe

  • Canned piineapple slices 8 + for garnishing

  • Canned peaches 8 + for garnishing

  • Coconut milk 2 cups

  • Vanilla icecream 8 scoops

  • Fresh mint sprigs 4

Method

Step 1

Halve the pineapple slices and put them into a blender jar, add the peaches and blend into a smooth paste.

Step 2

Add 1 cup coconut milk and blend once again. Add vanilla ice cream, 3-4 ice cubes and remaining coconut milk and blend again.

Step 3

Pour into tall serving glasses, decorate the rim of each glass with a piece of pineapple slice, 2 pieces of peach and a mint sprig and serve chilled.
