Piri Piri Pakoras

Thin slices of potatoes dipped in gram flour, deep-fried and served sprinkled with a flavourful spice mix. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Piri Piri Pakoras

  • 2-3 medium Potatoes with skin
  • to taste Salt
  • 1 cup Gram flour (besan)
  • 1 teaspoon Red chilli powder
  • ¼ teaspoon Turmeric powder
  • ¼ teaspoon Baking soda
  • for deep-frying Oil
  • for garnishing Fresh coriander leaves chopped
  • Spice mix
  • 1 teaspoon Onion powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • ½ teaspoon Dried oregano
  • 1 tablespoon Stock cubes crushed
  • a pinch Cinnamon powder
  • 1 teaspoon Red chilli flakes
  • to taste Salt
  • a pinch Powdered sugar

Method

  1. Thinly slice potatoes into a bowl of water. Add salt, mix and set aside.
  2. Mix together gram flour, chilli powder, turmeric powder, salt and sufficient water to make a thick batter. Add baking soda and mix.
  3. To make the spice mix, take onion powder, garlic powder, paprika, oregano, crushed stock cube, cinnamon powder, chilli flakes, salt and powdered sugar in a bowl and mix well.
  4. Heat sufficient oil in a kadai.
  5. Dip the potato slices, one by one, in the batter and deep-fry in hot oil till golden. Drain on absorbent paper.
  6. Sprinkle the prepared spice mix over them and mix lightly.
  7. Garnish with coriander leaves and serve immediately.
