Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Piri Piri Roast Chicken Recipe

  • Chicken legs 2

  • Piri piri spice mix 2 tablespoons

  • Salt to taste

  • Fresh parsley chopped 1 tablespoon

  • Olive oil 2 tablespoons

  • Lemon 1/2

  • Mashed potatoes to serve

  • Sautéed vegetables to serve


Step 1

Take chicken legs in a bowl, add piri piri spice mix, salt, parsley, olive oil, squeeze the juice of ½ lemon and rub in all over the chicken legs. Set aside to marinate for 30 minutes.

Step 2

Preheat the oven at 150˚C. Keep a rack in a baking tray.

Step 3

Place the chicken legs on the rack in the baking tray, keep it in the preheated oven and bake for 30-35 minutes.

Step 4

Take the chicken legs out of the oven and halve them. Keep some mashed potatoes on a serving plate and arrange sautéed vegetables on side. Keep the chicken legs over them and serve immediately.
