Ingredients list for Pista and Caramelized Apple Cup Cakes
- 1/4 cup + to sprinkle Pistachio
 - 2 medium Apples chopped
 - 1 cup Refined flour (maida)
 - 1 1/2 teaspoons Baking powder
 - 1 cup Softened butter
 - 1 cup Castor sugar
 - 1 cup Brown sugar
 - 5 Eggs
 
Method
- Preheat oven to 180° C.
 - Sift refined flour and baking powder into a bowl.
 - Place softened butter in another bowl, add castor sugar and cream together till light.
 - Place brown sugar in a pan, add chopped apples and 2 tbsps water, cover and cook.
 - Break eggs and add to butter-sugar mixture and mix well.
 - When brown sugar-apple mixture begins to caramelize, switch off heat and let it cool slightly. Add pistachios and mix well.
 - Add this mixture to flour mixture and mix well. Add egg mixture and mix well.
 - Pour the batter into muffin moulds till ¾ full. Sprinkle some pistachios on top.
 - Bake in the preheated oven for 50 minutes. Remove from oven and let them cool slightly.
 - Remove from the moulds and serve hot.
