Italian cuisine has developed through centuries of social and political changes, with roots stretching to antiquity.  Italian cuisine is simple and a number of dishes having only four to eight ingredients.  They rely mostly on the quality of ingredients rather than elaborate preparation.
Noteworthy changes in Italian cuisine happened with the discovery of the New World and the introduction of potatoes, tomatoes, bell peppers and maize, which are now an integral part of this cuisine.  Italian cuisine is known for its regional diversity each with a distinct taste.  This cuisine today is probably one of the most popular in the world.

Ingredients for Pistou Recipe

  • Pesto Sauce 4 tablespoons

  • Small Shaped Pasta 1/2 cup

  • Courgette diced 1

  • Potato diced 1 small

  • Shallots chopped 1

  • Carrot diced 1

  • Tomatoes chopped 3 medium

  • Vegetable stock 5 cups

  • French beans cut into lengthways 10 to taste

  • Salt to taste

  • Black pepper powder to taste

  • Green peas 1/2 cup

  • Sundried tomato paste 1 tablespoon

  • Parmesan cheese grated to sprinkle


Step 1

Place the courgette, potato, shallot, carrot and tomatoes in a large pan.

Step 2

Add vegetable stock and season with salt and pepper powder. Bring the mixture to boil, reduce heat and simmer Add the French beans, green peas and pasta and cook till the pasta is tender.

Step 3

Adjust the seasoning. Put the soup into individual bowls.

Step 4

Mix together pesto sauce and sun dried tomatoes paste and stir into each bowl.

Step 5

Sprinkle grated parmesan cheese on the soup in each bowl and serve hot.
