Gujarat has long stretches of unspoilt coastline and an endless supply of fish and shell fish. But strict Jainism in the past and orthodox Hinduism today has encouraged widespread vegetarianism.  The Gujarati cuisine is not heavily spiced but slightly sweeter than the cuisines of the neighbouring states.
Gujarati food is distinctively vegetarian with about 65% of its population shunning the meat.  The remaining 35% of the state’s population consists of Bohra Muslims and Parsis. Bohra Muslims are the followers of Abdullah who were Hindus who adopted Muslim religion.  The Parsi cuisine on the other hand is a blend of western influences.

Ingredients for Plantain Sambhariya Recipe

  • Raw Banana halved horizontally, boiled, peeled and cut into f 4

  • Coconut 1 tbsp + f

  • Cumin seeds 1 teaspoon

  • Green chillies 4

  • Raw peanuts ½ cup

  • Raisins 2 tablespoons

  • Scraped coconut fresh 1 cup

  • Fresh coriander leaves 1 medium bunch

  • Salt to taste

  • Sugar 1½ tablespoons

  • Juice of 1 lemon

Method

Step 1

Heat sufficient oil in a kadai. Deep-fry the bananas fingers till golden and drain on absorbent paper.

Step 2

Heat the remaining oil in a non-stick pan, add cumin seeds and green chillies and sauté till fragrant.

Step 3

Add raw peanuts and sauté for 3-4 minutes.

Step 4

Add fried bananas, raisins, coconut, coriander leaves, salt, sugar and lemon juice and mix well. Cook for 1-2 minutes.

Step 5

Transfer into a serving bowl and serve.
