Ingredients for Plum Shortcake Recipe

  • Plums chopped 5-6

  • Refined Flour 225 grams

  • Baking powder 2 teaspoons

  • Eggs 5

  • Vanilla essence 1 teaspoon

  • Sugar 1 cup

  • Butter 200 grams

  • Plum slices few to garnish

  • Icing sugar to garnish


Step 1

Preheat oven to 180°C. Sieve together refined flour and baking powder into a bowl.

Step 2

Whisk together eggs and vanilla essence in another bowl for 1-2 minutes. Add sugar, little by little, and whisk for 5-7 minutes or till fluffy.

Step 3

Add butter and whisk further for 2-3 minutes. Add plums and flour and mix using cut and fold method.

Step 4

Pour the mixture into a greased cake tin and bake in the preheated oven for 25-30 minutes. Remove from the cake tin, garnish with fresh plum slices, dust some icing sugar and serve.
