The cuisine of The United States is a rich amalgamation of peoples, religions and cultures thanks to the immigrants from different parts of the world.  They brought with them their local ingredients as well as cooking styles with them.  Yet amidst all these varieties Chinese and Italian cuisines dominate.  
During the 18th and 19th centuries, the Americans developed a number of new foods.  What characterised the American cuisine is the adaptation of a fusion of multiple ethnic cooking styles. During this period food production and presentation became more industrialised.

Ingredients for Poached Fish And Dill Salad Recipe

  • Fish fillets cut into 1 inch pieces 250 grams

  • Fresh dill leaves finely chopped a few sprigs

  • Black peppercorns 4-5

  • Bay leaf 1

  • Celery sliced 2 inch stalk

  • Lemon juice 1 tablespoon

  • Salt to taste

  • Black peppercorns crushed 1/4 teaspoon

  • Olive oil 2 tablespoons

  • Green capsicum cut into 1/2 inch pieces 1 medium


Step 1

Heat sufficient water in a shallow pan, add peppercorns, bay leaf and celery. Bring it to a boil. Add the fish pieces and cook uncovered for two minutes or till the fish is done. Do not overcook.

Step 2

Remove from the water carefully and cool. Prepare dressing using lemon juice, salt, crushed peppercorns and olive oil. Add the dill leaves to this dressing, reserving some for the garnish.

Step 3

In a bowl arrange poached fish cubes carefully. Add capsicum pieces and sprinkle the dressing. Gently mix and serve chilled garnished with remaining dill leaves.
