Ingredients for Polenta Cookies Recipe

  • Polenta ½ cup

  • Butter 1 cup + 1 tablespoon

  • Refined flour (maida) 1¼ cups

  • Sugar ¾ cup

  • Egg 1

  • Vanilla essence 1 teaspoon

  • Salt ¼ teaspoon

  • Milk 1 tablespoon


Step 1

Preheat the oven to 180° C. Line a baking tray with a silicon mat.

Step 2

Cream together the butter and castor sugar in a bowl using an electric beater.

Step 3

Add the egg and vanilla essence and whisk. Add the salt and fold. Add the polenta and flour and fold again. Add the milk and mix well.

Step 4

Put small scoops of dough onto the lined baking tray and lightly flatten using the back of a fork. This makes twelve cookies.

Step 5

Put the baking tray in preheated oven and bake forten to fifteen minutes. Remove from oven and cool.
