Favourite seafood? Prawns, prawns and more of prawns. A wide variety of small crustaceans, tiny relatives of the lobster, are known as prawns. Prawns are normally translucent when raw but get their distinctive pink or red colour on being cooked. one word of caution – if buying unpeeled prawns, smell for freshness and look for bright, shiny shells that have some spring left in them.

Ingredients for Prawn Omlette Recipe

  • Medium prawns shelled, deveined and washed 20-24

  • Eggs 4

  • Salt to taste

  • Oil 2 tablespoons

  • Green chillies chopped 2-3

  • Medium onion chopped 1

  • Medium tomato chopped 1

  • Turmeric powder 1/2 teaspoon

  • Red chilli powder 1 teaspoon

  • Button mushrooms chopped 6-8

  • Fresh coriander leaves chopped 3-4 tablespoons

  • Processed cheese grated 3-4 tablespoons

  • Bread slices toasted to serve


Step 1

For each portion break 2 eggs into a bowl, add salt and whisk well with a fork.

Step 2

Heat 1 tbsp oil in a non-stick pan, add half the green chillies, half the onion and half the tomato, mix and saute for 1-2 minutes.

Step 3

Add salt, ¼ tsp turmeric powder and ½ tsp red chilli powder and mix well. Add half the prawns, mix and sauté for 1-2 minutes.

Step 4

Add half the mushrooms, mix well and cook for 1-2 minute. Spread this mixture evenly and pour the eggs over them. Sprinkle half the coriander leaves and half cheese. Cover and cook for 2-3 minutes.

Step 5

Loosen the edges and fold the omelette in half. Halve the omelette and slide each half onto a serving plate. Serve hot with toasted bread slices.

Step 6

Cook the remaining eggs and prawns similarly.
