How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Pressed Rice Phirni Recipe

  • Pressed rice (poha) 3/4 cup

  • Milk 4 cups

  • Sugar 5 tablespoons

  • Pistachios chopped 1 tablespoon

Method

Step 1

Roast pressed rice in a non-stick pan till crisp.

Step 2

Remove from heat, cool and grind coarsely.

Step 3

Boil milk and sugar in another non-stick pan, add ground pressed rice and cook, stirring continuously, for three to four minutes.

Step 4

Pour the phirni into four individual bowls and sprinkle pistachios.

Step 5

Cool and refrigerate for one hour. Serve chilled.
