Pumpkin South Indian Style

Ingredients                    

  • 500 grams pumpkin, cut into 1 inch cubes            
  • 4 tablespoons oil                        
  • 3 medium onions, sliced                
  • 3-4 garlic cloves, crushed            
  • 3 fresh red chillies, chopped    
  • Salt to taste                        
  • 7-8 peppercorns, crushed                
  • ½ teaspoon cinnamon powder                
  • ¼ cup desiccated coconut                
  • 3 medium tomatoes, chopped                

Method 

  1. Heat oil in a pan, add sliced onions and sauté on high heat. 
  2. Add pumpkin pieces and sauté for a few minutes.
  3. Add crushed garlic and sauté.  Add fresh red chillies, salt and crushed peppercorns and mix.
  4. Add cinnamon powder, desiccated coconut, chopped tomatoes and half a cup of water.
  5. Cover and cook for twenty to twenty five minutes or till done.
  6. Serve hot.
