By Sanjeev Kapoor 22 Oct 2020 in Recipes Course New Update Main Ingredients Pumpkin, Walnuts Cuisine Fusion Course Soups Prep Time 11-15 minutes Cook time 26-30 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Advertisment Ingredients list for Pumpkin and Walnut Soup - SK Khazana 2 cups Pumpkin peeled and sliced 1/4 cup Walnuts 2 tablespoons Olive oil 2 Medium onions chopped 6-7 Garlic cloves 1 teaspoon Castor sugar 1 1/2 tablespoons Curry powder to taste Salt 1 teaspoon White pepper powder 2 cups Vegetable stock 1 tablespoon Lemon juice 1/2 cup Fresh cream to garnish Fresh parsley chopped Method Heat olive oil in a pressure cooker, add onions and garlic, mix and sauté till fragrant. Add pumpkin, mix and sauté for 3-4 minutes. Add castor sugar, curry powder, salt, white pepper powder and walnuts and mix well. Add 1 cup vegetable stock and lemon juice and mix well. Cover the cooker with the lid and cook under pressure till 2 whistles are given out. Open the lid when the pressure settles completely and blend the pumpkin mixture with a hand blender to a fine puree. Strain the puree into a deep non-stick pan, add 1 cup vegetable stock to get the required consistency, mix and bring it to a boil. Add fresh cream and mix well. Add parsley and mix well.
