Ingredients list for Purple Yam Wadiyaan

  • 250 grams Purple Yam peeled and cut into small cubes
  • 3 Punjabi Wadis deep fried and soaked in water
  • 2 tablespoons Oil
  • 1/2 teaspoons Cumin seeds
  • 1/4 teaspoon Asafoetida
  • 3-4 Green chillies cut lengthwise
  • 1 inch Ginger finely chopped
  • 1 tablespoon Coriander powder
  • 1/4 teaspoon Turmeric powder
  • 1/2 teaspoon Red chilli powder
  • 1/4 teaspoon Cumin powder
  • to taste Salt
  • Juice of ½ lemon
  • 2 tablespoons Fresh coriander leaves finely chopped

Method

  1. Heat oil in a non-stick pan, add cumin seeds and asafoetida and sauté till fragrant. Add green chillies and ginger and sauté for a minute.
  2. Add purple yam and sauté for 3-4 minutes. Add coriander powder, turmeric powder, red chilli powder, cumin powder, salt and mix well and sauté for a minute.
  3. Break the wadis and add to the pan. Add lemon juice and coriander leaves and mix well.
  4. Transfer into a serving bowl and serve hot.
