Ingredients

  • 1 cup quinoa, cooked
  • 1 medium sweet potato, boiled, peeled and cut into small pieces
  • ½ cup orange segments
  • ½ cup roasted walnuts
  • 8-10 baby arugula leaves
  • Juice of 1 lemon
  • Salt to taste
  • Crushed black peppercorns to taste

Method

  1. Take quinoa in a bowl. Add walnuts, orange, arugula leaves and sweet potato pieces and mix well.
  2. Add lemon juice, salt and crushed peppercorns and mix well.
  3. Serve immediately.
