Ingredients for Quinoa Sweet Potato and Orange Salad Recipe

  • Quinoa cooked 1 cup

  • Sweet potato boiled, peeled and cut into small pieces 1 medium

  • Orange segments ½ cup

  • Walnuts roasted ½ cup

  • baby arugula leaves 8-10

  • Juice of 1 lemon

  • Salt to taste

  • Crushed black peppercorns to taste


Step 1

Take quinoa in a bowl. Add walnuts, orange, arugula leaves and sweet potato pieces and mix well.

Step 2

Add lemon juice, salt and crushed peppercorns and mix well.

Step 3

Serve immediately.
